I am a real oatmeal cookie monster... I only counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? You can find all my oatmeal cookie recipes directly there!) They're a few of the most well-known recipes on my blog cause they taste very sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you're going to start with whole wheat germ (or gluten free, if you like ) and instantaneous oats (like those... or those for a gluten-free version!) . Immediate oats are smaller and thinner than traditional rolled oats, also you can see them in canisters right next to those old-fashioned oats in the grocery store.
I probably sound like a broken record by now... But because I ? you and want your cookies to flip out absolutely soft and chewy, I'm reminding you again... Quantify your flour and oats correctly, with this technique or a kitchen scale! (? That is the one I have and enjoy. It just cost $20!) A lot of either side will make your cookies taste cakey or dry, instead of chewy. This is particularly true of this oats--that they act like little sponges and soak up plenty of moisture out of your cookie dough!

See those bananas? And all of those brown spots? If it comes to baking with bananas, brown = amazing! I ? extra speckly bananas cause they have so much glowing, bold taste --and also additional sweetness! That is the minimum number of brown which I suggest. More is better!
The rest of the cookie dough's sweetness comes from another organic ingredient... Pure maple syrup (such as that!) . You would like the type that comes directly from pine trees, which is usually offered in skinny glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The raisins add even more sweetness! The freshly bought, extra plump, perfectly delicate ones are ideal... But if you have older, somewhat dried out carbohydrates (hmm... it seems absurd to explain dried fruit as dried out! ) , that is fine!
Simply add them to a microwave-safe bowl, and put water on top until visite site they're completely coated. Seal plastic wrap over the surface, and then microwave the bowl on high for 1 minute. Should you allow the raisins sit while mixing together the cookie dough, then this little trick hydrates them so they're exceptionally juicy--and that makes a big difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The familiar cozy spices and plump blueberries make these even more irresistible. They will keep for at least one week if kept in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Stir in the maple syrup. Add in the flour mixture, stirring only until incorporated. Let the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, dip the cookie dough into 15 curved scoops on the prepared sheet, and flatten to the desired depth and width by means Banana Oatmeal Cookies Recipe - Rachael Ray of a spatula. Bake in 325°F for 10-12 minutes.
Notes: It's extremely important to quantify both the oats and flour properly employing this technique or even a kitchen scale. (? That's the one I own and love!) Too much of either would dry out the cookies and render them cakey instead of chewy.
Instant oats are also referred to as quick-cooking or moment oats. They come in huge canisters, just like conservative oats. They're not the ones in the small flavored packets of oatmeal. To create your own, include the same amount of traditional yogurt into a food processor, and pulse 10-12 times or until the oats are about 1/4 into ? of the initial size.
For the gluten-free flour, I recommend the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tbsp (15g) brown rice bran, and 1/2 teaspoon xanthan gum. Most store-bought fermented flour blends (such as that one!) Will also do the job, if quantified like this.
For your best results, use the ripest and spottiest bananas you'll be able to find!
In case your pancakes are old, dryer, and not so plump or succulent... Add them into a microwave-safe bowland put water on top until they're completely coated. Seal plastic wrap across the top, and microwave the bowl on high for 1 minute. If you let the peppers sit mixing together the cookie dough, then this small hint hydrates them they're really tender and juicy!
